White Chocolate Chip Cookies

Two posts in a matter of a couple of days?  That’s some sort of record for me!  I wish I had more of a story to go along with this recipe but, unfortunately, I do not.  Instead let’s hop right into the swing of things!  Below is my recipe for white chocolate chip cookies.  We have all had regular chocolate chip cookies (and if you haven’t, who hurt you?) but if you’re like me and dislike milk chocolate, these might be right up your alley.

  • Ingredients:
  • 2 cups AP flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 sticks unsalted butter, melted and cooled slightly
  • 1 cup firmly-packed light brown sugar
  • 1/2 cup white sugar
  • 2 whole eggs
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon red food coloring (optional, if you want your cookies to be on the red velvet side of things)
  • 2 cups white chocolate chips (Ghirardelli makes fantastic ones)
  1. Combine the flour, cocoa powder, baking soda, and salt in a medium-size mixing bowl.
  2. Cream the cooled melted butter and both sugars together in a large mixing bowl with a wooden spoon until smooth.  Add the eggs and vanilla extract and using a hand-mixer beat until smooth.  Beat in the food coloring (if you’re using it), scraping down the sides of the bowl as necessary.
  3. Stir in the flour mixture until just incorporated.  Stir in the white chocolate chips.
  4. Place the bowl in the fridge for a minimum of 10 minutes (or up until a few hours).
  5. Preheat your oven to 350 degrees F.
  6. Remove the bowl from the fridge and drop the batter by heaping tablespoonfuls onto ungreased baking sheets, leaving about 3-inches between each cookie.
  7. Bake for 10-11 minutes, or until the cookies are firm around the edges but still soft on top.
  8. Let the cookies stand on the baking sheet for 5 minutes.  Use a metal spatula to transfer them to a cooling rack to cool completely.  Depending on the size of your cookies, this recipe will make about 3-4 dozen.

These came out great!  Like I said earlier, if you’re not into the whole milk chocolate craze, then these might be more your style.  They’re not too sweet and the white chocolate chips definitely change the flavor around a bit.
